An unusual and economical dish can be prepared for the whole family from a couple of eggplants, eggs, vegetables and a minimum amount of meat (or even without it). Very fast and very simple, and the result is so delicious that it's hard to believe! It can be served both as an appetizer and as a main course, like the same fried zucchini with garlic. Make sure to have these cool eggplants ready soon!

Ingredients for the dish:

  • 2 eggplants;
  • 3 eggs;
  • 1 sausage (can be replaced with chicken, ham, etc.);
  • 1 tbsp. l. flour;
  • 1/2 carrots;
  • green onions;
  • salt and pepper to taste.

Let's start cooking:

Cut the eggplants into large rings. Leave in salted water for 5 minutes, then rinse.

In a bowl, mix finely chopped carrots, sausage, green onions.

Cut out the middle of the eggplant with a spoon. Cut the pulp into small cubes.

Add to the rest of the ingredients. Salt, pepper and drive in 3 eggs, mix.

Add 1 tbsp. l. flour, mix again. The filling is ready!

Put the eggplants in a preheated pan with vegetable oil, distribute the filling inside. Cover with a lid and cook over low heat for a couple of minutes.
