Grandma nyagra (black grandma) - a masterpiece recipe for Moldovan cuisine. This pastry is prepared for big holidays (weddings, christenings) and served on the table with grandma alba (white grandma) from homemade noodles on a wide platter, cut into cubes.
Several large portions are baked at once, because Moldovan feasts are a general gathering of numerous relatives, godfathers, friends … White and black grandmothers complement each other, symbolizing the unity of opposites, the beginning of the feminine and masculine.
The recipe is amazing in everything: from the cooking technology to the result obtained. You will not find anything like this in other recipes! Prepare the dishes more extensively for both kneading and baking: the dough will be frothy, and there will be a lot of it.
Ingredients
- Egg 10 pcs.
- Sugar 300 g
- Sunflower oil 200 ml
- Kefir 250 ml
- Milk 500 ml
- Vodka 25 ml
- Soda 1 tbsp. l.
- Butter 30 g
- Breadcrumbs 2 tbsp l.
- Wheat flour 2 cu.
Preparation
1. Sift flour and baking soda into a large bowl, add sugar. Pour in sunflower oil and stir.
2. Introduce kefir into the resulting mass in portions, then milk. Whisk everything until smooth so that there are no lumps.

3. Beat eggs in a separate bowl. Stirring the dough continuously, add the eggs, then pour in the vodka. The dough should turn out to be liquid, like for pancakes, but very voluminous and frothy. Remember at the beginning it was said to take a bigger bowl?

4. Pour the mass into a thick-walled dish (cauldron or rooster), greased with butter and sprinkled with breadcrumbs. Bake at 200 degrees for 1 hour 40 minutes. Then reduce the temperature to 100 degrees and cook the grandmother for another 1.5 hours.
