Jelly. To make jelly, you will need gelatin and berry juice, syrup, milk, or cream. For 1 liter of liquid, you need about 50 g of gelatin. Gelatin is soaked in water and left to swell. After it swells, the excess water is drained, and the gelatin is introduced into boiling syrup or milk and stirred continuously until it dissolves. This mixture is poured into molds, cooled and refrigerated for several hours. To gently remove the jelly from the mold, you need to dip it in hot water for a few seconds.

Berries. Any berries are suitable for jelly - cherries, cherries, blackberries, raspberries, strawberries, red and black currants, cranberries, lingonberries and others. Make a puree from the berries and mix with gelatin dissolved in a small amount of boiling water. You can also boil berry juice jelly and pour over fresh berries.

Vanilla, citrus zest, wine and various liqueurs are added to the jelly to give special shades of taste. Jelly, laid out in layers, looks very impressive. To do this, several types of jelly from different berries, chocolate, cream (it is especially beautiful when transparent layers alternate with opaque ones) are poured into molds one by one. First, one layer is poured into the mold. After it hardens a little, carefully add the next layer in a thin stream.

Berry jelly can be used not only as an independent dessert, but also to decorate baked goods. When the jelly is already thick enough, but has not yet completely hardened, it is poured onto the cake base and left to harden in a cool place. Ready-made jelly can be cut into cubes and decorated with them on a cake or other dessert - ice cream, parfait, soufflé.
