Ingredients:

  • 5-6 pcs. boiled potatoes,
  • a small bunch of radishes,
  • 2-3 fresh cucumbers,
  • 5 chicken eggs (boiled),
  • 70 g green onions,
  • a few sprigs of dill,
  • 1 tbsp French mustard,
  • 1 liter of kefir 2.5% fat,
  • 1 tbsp. boiled chilled water,
  • sour cream,
  • salt
  • ground black pepper (to taste).

Preparation:

Cut the radishes into small plates, cucumbers and potatoes into small cubes. Finely chop green onions and dill and rub with salt. Separate the egg whites from the yolks, cut the whites into cubes, grind the yolks with mustard.

We take a deep saucepan and put all prepared foods in it - radishes, cucumbers, potatoes, egg whites. Pour all this with kefir, pepper and mix. Then add the yolks, mashed with mustard and onions with herbs, mashed with salt. Mix again. We try it for salt, add salt if necessary. If desired, okroshka can be diluted with boiled water. Serve okroshka with sour cream.

Ingredients:

  • 2-3 l of whey
  • 6-7 potatoes, boiled in their skins
  • 9-10 tough eggs
  • 0.5 kg of boiled meat
  • 4-5 medium cucumbers
  • 500 ml 67% mayonnaise
  • 1 bunch of green onions
  • 1 bunch of dill
  • radish - optional and to taste
  • citric acid to taste
  • salt to taste

Preparation:

Peel potatoes and eggs, cut into small cubes.

Cut the boiled meat into small cubes.

Cut the cucumbers into small cubes or thin crescents.

Put all the ingredients in a saucepan, add mayonnaise, citric acid, salt and mix well.

Pour in whey so that the okroshka needs to be thick, and put it in the refrigerator for a couple of hours so that it is infused and cooled.

3. PAINTING ON WATER

Ingredients:

  • 3 liters of boiled water from the refrigerator
  • about 1 kg of potatoes, cooked in their skins
  • 10 cool eggs
  • 700-800 g of boiled beef
  • 1 bunch of green onions
  • 1 bunch of dill
  • 1 bunch of parsley
  • 3-4 large cucumbers
  • 300 g mayonnaise
  • 5 teaspoons of mustard
  • 1 large lemon (you can substitute 0.5 teaspoon of citric acid)

Preparation:

Cut all ingredients as you like - coarser or finer. If the cucumbers are bitter, peel them off.

When cutting the eggs, set aside 2-3 boiled yolks for dressing.

Mash 3 boiled yolks with mustard, add salt (for the entire pan) and squeeze out the lemon juice.

Dilute this mixture with a small amount of cold boiled water and pour okroshka, add 200 g of mayonnaise, mix well, add the remaining water, stir again and pour into plates.

Add some more mayonnaise to each plate before serving.

4. OKROSHKA WITH SAUSAGE

Ingredients:

  • 200 g boiled sausage
  • 150 g cucumbers
  • 200 g of potatoes, boiled in their skins
  • 4 cool eggs
  • 50 g green onions
  • dill - to taste
  • salt to taste
  • sour cream - to taste
  • 1 l of kvass

Preparation:

Potatoes, sausages and cucumbers are cut into cubes, eggs, green onions and dill are cut into small pieces.

Mix all the ingredients in a saucepan, salt to taste and pour over with kvass.

Pour okroshka into plates, season with sour cream and serve.

5. OKROSHKA WITH SHRIMPS

Ingredients:

  • 400 g boiled shrimp,
  • 4 fresh tomatoes,
  • 5 boiled eggs
  • juice of 1 lemon,
  • 1 bunch of dill
  • 1 bunch of green onions
  • 1 pack of mayonnaise,
  • 1.5 l of drinking cold water,
  • salt to taste.

Preparation:

If you are using large shrimps, cut them up. Rinse the tomatoes and cut into cubes. We wash the greens, dry and grind. Peel the eggs and cut into cubes. We send all the prepared products to the pan and fill with mayonnaise, stir, and then add freshly squeezed lemon juice, salt and water.
