Czech garlic soup

The traditional Czech garlic soup (česnečka) will please both adults and children - it is so fragrant and healthy.

  • 2 liters of broth (or water)
  • 20 g butter
  • 1 onion
  • 1 head of garlic
  • 3 medium potatoes
  • 1 egg
  • 3 tbsp. l. cream, 10% fat
  • salt, pepper, herbs and spices to taste

Melt the butter in a frying pan and fry the chopped onion and half of the garlic in it. Add the diced potatoes and cook for 7 minutes. Send the fry to the boiling broth (water), cook for 15 minutes.

In a separate bowl, beat the egg and cream, add the remaining cloves of garlic, passed through a press. Gently add a couple of tablespoons of boiling broth to the egg mixture (to raise the temperature) and then pour the mixture into the soup. Bring to a boil, serve with croutons and herbs.

Soup with green peas and mint

You've probably cooked soup with fresh or frozen green peas. What about the minty notes? Try it!

  • 1.5 l of water
  • 250 g frozen green peas
  • 3 potatoes
  • 1 large onion
  • 1 clove of garlic
  • a few sprigs of mint
  • 30 g butter
  • 100 ml cream, 10% fat
  • salt to taste

Bring the water in a saucepan to a boil, dip the peeled and diced potatoes into it, cook for 10 minutes. Melt the butter in a frying pan, fry the onion in it until golden brown. Send the onions to a saucepan, add the peas, cook over medium heat for 10 minutes. Season the soup with salt to taste.

Pour in the cream, add chopped garlic, finely chopped mint leaves, bring the soup to a boil, remove from heat.

Quick fish pollock soup

Unusually fragrant pollock soup will appeal to all lovers of fish dishes.

  • 500 g pollock fillet
  • 1 carrot
  • 4 potatoes
  • 1 liter of water
  • 3 black peppercorns
  • salt to taste
  • dill greens to taste

Cut the pollock fillet into medium-sized pieces and place in boiling water. Cook for 7 minutes. Chop potatoes and carrots, add to fish. Do not forget to add salt and pepper to the broth. Cook until tender. Season the soup with chopped dill when serving.

Buckwheat soup with mushrooms

  • 500 g potatoes
  • 1 carrot
  • 1 onion
  • 300 g champignons
  • 3-4 st. l. buckwheat
  • 1 tbsp. l. sunflower oil
  • 2 tbsp. l. soy sauce
  • greens to taste

Rinse the mushrooms, pour over boiling water, cut and send to the pan to fry. Add soy sauce, then chopped onions and grated carrots, cook until half cooked.

Throw diced potatoes and washed buckwheat into boiling water. Cook for 10 minutes, then add the mushroom fry and cook until tender (another 15 minutes). Salt, if necessary, season with herbs when serving.

Canned Bean Quick Soup

  • 400 g (1 can) canned white beans
  • 1.5 l of water
  • 1 liter chicken broth
  • 3 potatoes
  • 1 carrot
  • 1 onion
  • 1 bell pepper
  • 3 tooth. garlic
  • 1 tbsp. l. tomato paste
  • 20 g butter
  • salt, pepper to taste
  • 1 bay leaf

Bring the broth (water can be used) to a boil in a saucepan, toss in the diced potatoes. Meanwhile, fry the chopped onion with grated carrots in butter. Add minced garlic and tomato paste.

Transfer the roast to a saucepan, add the diced bell pepper. Cook for 7 minutes. Add the beans (from which the water was previously drained), bay leaves, salt and pepper to taste, cook until tender.
