In Norway, it is customary to serve herring with various sauces and marinades for Christmas breakfast. There are a great many options for a herring snack! For example, herring with mustard sauce, curry sauce, tomato sauce, herring with sherry, sour cream, wine vinegar, fruit, nuts and even marinade made from local potato vodka. We suggest preparing Norwegian herring instead of herring under a fur coat - here are some recipes for snacks for the festive table.

1. Herring in tomato sauce

  • Lightly salted herring fillet - 400 g
  • Red onion - 1 pc.
  • Tomato sauce (natural) - 300 ml
  • Vegetable oil - 2 tbsp. l.
  • Sugar - 1 tbsp. l.
  • Salt - 1/2 tsp (taste)
  • Wine vinegar - 1 tbsp l.
  • Pepper-peas - 1/2 tsp.
  • Allspice - 5 pcs.
  • Bay leaf - 1 pc.
  • Carnation - 3 pcs.
  • Dill (chopped) - 1 tbsp. l.

Pour tomato sauce into a small saucepan, add vegetable oil, cloves, pepper, bay leaf, sugar, salt and vinegar, mix well and bring to a boil. Cook the sauce over low heat for 2 minutes, until the sugar is completely dissolved. Then cool.

Cut the herring fillet into small pieces, the onion into half rings. If the herring is very salty, soak it in cold water or milk beforehand. Pour the herring slices with cold tomato sauce, add the dill and refrigerate for several hours, preferably overnight. Tomato sauce can be replaced with thick tomato juice.

2. Herring with grainy mustard and red caviar

  • Lightly salted herring fillet - 400 g
  • Granular mustard - 2 tbsp. l.
  • Fresh chopped chives (or green) - 2 tbsp l.
  • Honey - 1 tbsp. l.
  • Grape vinegar - 1 tsp
  • Vegetable oil - 1 tbsp. l.
  • Sour cream - 300 ml
  • Capelin caviar (or to taste) - 2 tbsp. l.
  • Salt to taste
  • Fresh dill to taste

Cut the herring fillet into small pieces. Lightly beat the vegetable oil with vinegar and honey, add granular mustard, sour cream and mix well. Then put chopped chives or thin green onions, dill and red caviar in the sauce. Pour herring slices with sauce, mix gently and refrigerate for several hours. Serve herring, garnished with red caviar and a sprig of dill.

3. Herring with curry sauce

  • Lightly salted herring fillet - 400 g
  • Green apple - 1 pc.
  • Celery - 1 stalk
  • Red onion - 1 pc.
  • Capers - 2 tbsp. l.
  • Fresh thyme

Curry sauce:

  • Sour cream - 150 ml
  • Mayonnaise - 100 ml
  • White wine vinegar - 1 tsp
  • Curry - 2 tbsp. l. (taste)
  • Mustard - 1 tsp
  • Sugar to taste
  • Salt to taste

Mix all the ingredients for the sauce, add sugar and salt to taste. Cut the herring into small pieces. Cut the apple, celery stalk and red onion into small cubes and add to the herring along with the capers. Then pour over everything with curry sauce, mix and refrigerate for several hours or for a day. When serving, the herring can be sprinkled with fresh thyme or other herbs to taste.

4. Spicy herring with sherry and chili

  • Herring - 400 g
  • Red onion - 1 pc.
  • Chili pepper - 2 cm
  • Fresh dill (chopped) - 1 tbsp. l.

For the marinade:

  • Sherry - 250 ml
  • Water - 150 ml
  • Red wine vinegar - 1 tbsp l.
  • Sugar - 1 tbsp. l. with a slide
  • Salt - 1/2 tsp (taste)
  • Allspice (whole) - a few things
  • Black pepper (whole) - a few things
  • Bay leaf - 1
  • Cloves - 2 pcs.
  • Anise - 1 pc.
  • Cinnamon - 1 stick

First, let's prepare the marinade. To do this, bring the sherry and water to a boil in a small saucepan, add sugar, salt, spices and cook over low heat until the sugar dissolves. Cool the marinade. If desired, the cinnamon and anise can be removed from the finished marinade.

Cut herring into small pieces, red onion and chili into rings. Pour marinade over herring with onions and chili, add dill and refrigerate for several hours. Similarly, you can make red wine marinated herring by simply replacing sherry with wine.

5. Herring in white sauce with horseradish and orange zest

  • Herring - 400 g
  • Chives (chopped) - 3 tbsp l.
  • Sour cream - 250 ml
  • Mayonnaise - 100 ml
  • Orange juice - 1 tbsp l.
  • 1/2 orange zest
  • Fresh horseradish (finely grated) - 1 tbsp. l. (taste)
  • A pinch of sugar and salt

Cut the herring into small pieces. Mix sour cream with mayonnaise and orange juice. Add horseradish, salt and sugar to taste. Pour herring over with sauce, add zest and onion, mix and refrigerate for several hours.
