Marinade "Hello from the Balkans!"
(for 2 kg of meat)
Cooking time: 3 hours.
INGREDIENTS
- 3 sweet red peppers
- 120-150 g cilantro
- 650 g natural yoghurt
- juice of half a lemon
- salt to taste
PREPARATION
Fry the peppers well. Then peel them of seeds and cut into strips. Combine natural yogurt with lemon juice, salt, chopped pepper and cilantro. Mix well.

Mediterranean marinade
(for 2-2.5 kg of meat)
Cooking time: 3 hours.
INGREDIENTS
- 450 ml olive oil
- 650 ml vegetable oil
- juice of half a lemon
- a small bunch of thyme
- 3 sprigs of rosemary
- 2 sprigs of sage
- 1 head of garlic
- black pepper to taste.
PREPARATION
Mix the two types of oil and add lemon juice, pepper and coarsely chopped herbs to them. Crush the garlic with the flat side of a knife and add to the marinade. Mix thoroughly.

Appetizing marinade with orange
(for 2-3 kg of meat)
Cooking time: 4 hours.
INGREDIENTS
- 1 orange
- 2 tbsp. l. garlic
- 2 tsp dried basil
- 1 tsp ground cardamom
- 650 fat sour cream
- 250 g mayonnaise
- salt and pepper to taste
PREPARATION
Grate the orange zest on a fine grater, squeeze the juice out of it and mix it all with garlic, basil and cardamom. Add salt and pepper to taste, as well as sour cream and mayonnaise. Mix thoroughly.

Wine marinade
(for 2 kg of meat)
Cooking time: 4 hours.
INGREDIENTS
- 200 g onions
- 150 ml still water
- 250 ml dry white wine
- 4 stalks lemongrass
- 2 tsp peppercorns
- salt to taste
PREPARATION
Peel and chop the onion coarsely. Add water, wine, salt and chopped lemongrass to it. If you did not find it on sale, replace it with lemon zest in equal proportions. Grind white pepper in a mortar and add to the marinade. Stir.

Florentine marinade
(for 2-3 kg of meat)
Cooking time: 2.5 hours.
INGREDIENTS
- 2-3 lemons
- 1 head of garlic
- a small bunch of rosemary
- 250 ml olive oil
- 750 ml vegetable oil
- coarsely ground black pepper to taste
PREPARATION
Chop lemons, mix with garlic and rosemary leaves, which must be coarsely chopped beforehand. Pour in the mixture of oils, add black pepper to taste. Mix well.
