1. Homemade sweet chili sauce
Sweet, spicy and ideal with shrimp
½ cup sugar
¼ cups of rice vinegar
½ cup water
1 ½ tablespoon garlic, minced
½ teaspoon crushed red pepper flakes

1½ tablespoon flour

2. Alabama style white barbecue sauce
2 cups mayonnaise
⅓ cups of white wine vinegar
3 tablespoons lemon juice
1 clove garlic, minced
1 tablespoon coarsely ground pepper
1 teaspoon sugar
1 teaspoon salt
2 teaspoons of horseradish

3. Homemade chimichurri
1 large bunch of parsley and cilantro
2 cloves of garlic
1 shallot or 1/2 regular onion
2 tbsp wine vinegar
100 ml olive oil
hot pepper (if desired)
1 tsp dried oregano
1/2 tsp ground cumin

4. Kansas City style BBQ sauce
2 tbsp. l. vegetable oil
1 tbsp. chopped onion
2 garlic cloves, crush
1 tbsp. tomato sauce

3 tbsp. l. dark brown sugar
3 tbsp. l. molasses

5. Homemade teriyaki sauce
This sauce can be made in just a few minutes by boiling brown sugar with soy sauce and honey.
1 cup of water
5 tablespoons brown sugar
¼ cups of soy sauce
1-2 tablespoons honey
1 large clove of garlic, well chopped
½ teaspoon chopped ginger

6. Homemade harris sauce
3 bell peppers
6 tablespoons toasted coriander seeds
6 tablespoons toasted cumin
40 gr. dried chili peppers
10 cloves of garlic
3 tablespoons sea salt
250 ml olive oil

7. Steak sauce
1 head of garlic
½ onion
½ sweet red pepper
½ teaspoon vegetable oil
Salt, pepper (to taste)
¼ cups of Worcester sauce

8. Homemade Sriracha sauce
200 gr. red chili
2 tbsp. l. Sahara
1 tbsp. l. salt
4 cloves of garlic

10. Mayonnaise with chipotle peppers
1 chipotle pepper
½ cup mayonnaise

11. Vegetarian Pesto Sauce
You only need 5 ingredients: walnuts, pea shoots, olive oil, mint and garlic

2-3 cloves of garlic
a pair of shallots
2-3 green chili peppers

1 tsp with a heap of ground coriander

13. Calabrian pesto
1 small eggplant, peeled and diced
2 tsp salt
1/4 cup olive oil
1 red chilli pepper, seeded and finely chopped
half a small onion, finely chopped
2 plum tomatoes, finely chopped
1/2 cup ricotta cheese
1/3 cup basil
freshly ground black pepper (to taste)

14. Avocado sauce
1 large ripe avocado
1/2 tbsp. sour cream
1/4 tbsp. milk
1 tbsp. l. lemon juice
1/2 tsp rice vinegar
3 cloves garlic, minced
2 tbsp. l. chopped dried parsley

15. Dried Tomato Pesto
1 cup dried tomatoes
1 cup basil leaves
1/4 cup fresh parsley

16. Hummus from Buffalo
1 can of cooked chickpeas (440 g), washed and dried

1/2 tsp smoked paprika

2 tbsp. l. (30 g) tahini
1 tbsp. l. (15 ml) any hot sauce
1 tbsp. l. (15 ml) lemon juice
1/2 cup (90 g) roasted red pepper
2 tbsp. l. (28 ml) olive oil or liquid from a jar of chickpeas (water can be used)

17. Pesto with almonds and cilantro
2 cups cilantro leaves
